Homemade Salsa

Homemade salsa fresh from the gardenAt the start of the spring season I started a new adventure with my husband: growing our first garden.   After planting vegetables from Lukas Nursery one evening, I quickly realized my husband and I were ‘garden happy’ and planted way more than what we were prepared for.

Garden signs for your vegetablesThe tomato plants in the background of the picture above are more than 6 feet tall now and producing sweet cherry tomatoes faster than we can pick them.  Our friends, neighbors, family, and co-workers are sharing in our love of gardening by getting fresh produce from us weekly!

Fresh vegetables from the garden

After another successful morning picking vegetables, I was determined to use as many cherry tomatoes as I could in a yummy recipe.  I had family coming into town and knew we would need snacks on hand.  With an abundance of cherry tomatoes from our garden, a few extra ingredients, and 15 minutes of my time, I had a delicious homemade salsa.  This recipe is perfect for a quick snack that is very refreshing!

Ingredients
14 cherry tomatoes
1/2 cup chopped cilantro
1/2 large onion, diced
3-4 garlic cloves, minced
1 green pepper, diced
Juice of 1 lime
1/2 cup chopped green onions

Start by dicing the cherry tomatoes or quickly pulse the cherry tomatoes in a food processor.  Dice 1/2 of a large onion and 1 green bell pepper.  Chop about 1/2 a cup of cilantro and 1/2 a cup of green onions.  You may want to add or take away the amount of cilantro depending on how much you like the flavor of this herb.  Mix all ingredients prepared so far.

garlic press by Pampered ChefMince 3-4 cloves of garlic.  I love using this garlic press to mince my garlic!  It takes just a few seconds and you don’t get the smell of garlic on your fingers that is so difficult to wash off.  Add the juice of 1 lime and the minced garlic to the mixture and stir.  Grab your favorite tortilla chips, an ice cold beverage, and you are ready to enjoy your homemade salsa!

    This looks great and I am definitely going to try it! You should have a section called ‘Ask Elizabeth’. I was looking at my wall and thinking it needs some pizzazz and your blog popped into my head. Was searching for home decor ideas but anything that satisfies my stomach trumps all!
