Having brunch with friends, family, or just because is something I look forward to when the weekend comes around. There’s even more of an excuse to host a brunch this weekend with Mother’s Day in the mix.
Which brings me to a new twist to the ever so popular mimosa that is paired with brunch or cheering to sweet celebrations. I said goodbye to orange juice and hello to pineapple juice. I can’t be the only one obsessing over everything pineapple lately.
To make these pineapple fizz mimosas even more spectacular, I added a splash of Grenadine. With three simple ingredients and a promise of a wonderful time while you mix and sip, you can’t go wrong with this summer mimosa!
Pineapple Mimosa with Grenadine
1 serving
Ingredients
|| 4 ounces of chilled champagne
|| 2 ounces of chilled pineapple juice
|| Dash of Grenadine
Make sure to chill the champagne and pineapple juice ahead of time for the best summer mimosa! Once chilled, pour the pineapple juice in a champagne glass. Very slowly pour the champagne over the pineapple juice. Add a dash of Grenadine to the mixture. Don’t worry! The Grenadine will slowly settle to the bottom and be careful not to use too much. It literally only takes a dash to get the results you see in the pictures.
