Last week my mother and 7 year old brother came for a visit here in Orlando traveling from Myrtle Beach, South Carolina. The week flew by and it was an absolute blast. We celebrated their arrival by having a lemonade sale in the morning {you can see the lemonade stand we built here on my Instagram} and finished the day off by creating and eating delicious cupcakes.
This gave me the opportunity to create a new twist on cupcakes that I had been thinking of. I decided to place pineapples on the back burner and create a delicious dessert with watermelons in mind! By creating a watermelon cupcake topper and turning the cupcake itself into a watermelon {seeds and all}, the cupcakes came out better than I was imagining! Here’s the how-to:
Watermelon Cupcakes
16 cupcakes
|| Number of cupcakes also depends on the size of your circle cookie cutter. ||
Supplies and Ingredients:
|| Three boxes of vanilla cake mix and ingredients according to the package instructions
|| Pink and green food coloring. You will need an entire bottle of each.
|| Two 16 oz. jars of buttercream icing
|| Circle cookie cutter
|| 3 cookie sheets {I used 3 disposable}
|| Mini chocolate chips
|| Watermelon Toppers {instructions below on how to create them}
Step 1 – Mix each box of vanilla cake mix according to package instructions in three separate bowls.
Step 2 – Mix the pink food coloring into one bowl of mixed cake batter and the green food coloring into another. I was really nervous about using an entire small bottle of food coloring, but it allowed me to get the bright pink and green color I was wanting. So don’t hesitate. Go for it!
Step 3 – This step is important! Mix one cup of mini chocolate chips into the pink cake batter. The mini chocolate chips are the ‘seeds’ of your watermelon cupcakes.
Step 4 – You will now have white, green, and pink cake batter. Pour each bowl of cake batter into the three separate cookie sheets. Spread the batter evenly and bake according to package instructions.
Step 5 – Once the cakes have been removed from the oven, allow each cake to completely cool before moving to the next step.
Step 6 – Cut out circles using the circle cookie cutter in each cake color.
Step 7 – Starting with a green cake circle, apply a spoonful of icing in the middle of the circle. Using the spoon spread the icing evenly across the top of the piece of cake.
Step 8 – Place a white cake circle on top of the iced green cake and repeat with icing.
Step 9 – Lastly, place the chocolate chip pink circle cake on top of the white circle cake. Make your icing on top a little fancier! I used an icing bag to apply my icing on top.
Step 10 –Insert the watermelon cupcake topper {directions on how to create your own below} as the finishing touch on each cupcake.
The best part about these cupcakes is the little fact that you don’t have to be perfect when putting them together! They are such a fun cupcake to make and did I mention adorable?
These cupcakes usually stay fresh for about 12 hours due to not being in a cupcake liner. If you are planning to make these for a party, wait until the morning of to make them. You can of course make the watermelon cupcake toppers ahead of time with the directions provided below. It is time to dig in and treat yo’ self to a cupcake!
Cupcake Watermelon Toppers
Supplies:
|| Watermelon Topper PDF (listed below)
|| Pink, green, and white cardstock or scrapbook paper
|| Regular glue
|| Glue gun
|| Glue sticks for glue gun
|| Black marker
|| Scissors
|| Toothpicks {I used the bamboo sticks pictured}
Step 1 – Download and print the Watermelon Toppers printable on cardstock by clicking on the image below. Also take the time to plug in your glue gun so that it can heat up while you are creating the watermelon toppers.
Step 2 – Cut out each half circle. Notice that each half circle has a color listed below it. This will be the color paper you will trace that certain half circle onto.
Step 3 – Once you have the half circles cut out, trace the half circles onto each piece of paper. Trace however many you need according to how many cupcakes you will be baking.
Step 4 – Glue the white half circle on top of the green half circle. You will then glue the pink half circle on top of the white. Make sure to securely glue the edges so that they do not pop up and focus on lining up the straight edge of all three colors.
Step 5 – Once all the pieces have been glued together, take your black marker and draw watermelon seeds on the pink paper.
Step 6 – The last step will be using the hot glue gun and placing a drop of glue at the top of your toothpick. Press the paper watermelon onto the drop of glue and firmly hold in place. You now have your watermelon topper!
